  • 2 kilos apples
  • 400 ml water
  • 400 g cane/muscovado/brown sugar per kilo of apple
  • 1 vanilla pod
  • 2 cinnamon sticks

Preparation

1. Cut the apple into quarters and put in a pot along with the water. Boil for approx. 35 minutes until the apple is very tender. The boiling time will vary depending on the type of apples used and how ripe they are. Push the apples through a fine-meshed sieve to remove the peel and core.

2. Put the apple back into the pot, and add the spices and the appropriate amount of sugar for the volume of apple.

3. Bring the applesauce just to a boil, then turn down the heat and simmer gently, uncovered. Let it simmer for approx. 1.5 hours – or until it has turned caramel brown and grown quite thick.

4. Pour into sterilised jars and let cool.
