1. Cook the pasta al dente and drain the water.
2. Bring the cream to a boil.
3. Cut Castello® Creamy Blue cheese into small pieces, add one half of the cheese to the cream and season with black pepper.
4. Whisk until you have a thick cheese sauce. Take it off the heat and add a pinch of salt.
5. Slice the mushrooms and fry in a little butter until golden. Season with salt and pepper.
6. Mix the mushrooms with the cheese sauce as well as the second half of the cheese already pre-cut into slices.
7. Pour the sauce over the pasta or add pasta into the sauce. Mix carefully.
8. Serve with some fresh basil and enjoy a delightfully complex flavour experience.
