Can I use other vegetables than roasted carrots? Yes, you can switch the roasted carrots and go with roasted potatoes, zucchinis, peppers, mushrooms, or onions. Or if choosing only one is too hard, you can serve a mix of vegetables. If you bake them up separately you have a range of delicious side dishes or snacks to serve. Mix them all in one and you have a wonderful and slightly heavier side dish or meal. You can also try seasoning with other herbs and spices if you have preferences. Roasted carrots are slightly bigger than other smaller vegetables and easily serve as a fulfilling side dish on its own, whereas going for mushrooms or peppers might require a few more side dishes to satisfy a hungry crowd. Creamy Castello Havarti will elevate almost any vegetable and the cheese will smoothly melt regardless of which vegetable you chose to go with.
