Pearl cous-cous salad with Castello® Greek Style Cheese & grilled zucchini

  • 265 g (1 jar) Castello® Marinated Greek Style Cheese in Oil with Garlic and Herbs 265g
  • 1⅓ cups pearl couscous, cooked and cooled
  • 16 thin slices grilled zucchinis
  • ½ lemon finely grated, zest and juice
  • 1 red chilli, deseeded and chopped
  • bunch fresh mint leaves

Preparation

1. Place the cous-cous into a mixing bowl with the oil from the Castello® Greek Style Cheese jar.

2. Add the grilled zucchini, lemon, chilli, and mint, season with freshly ground black pepper, and mix until combined.

3. Top with the Castello® Greek Style Cheese cubes and serve.
