1. Place the wine in a medium saucepan and warm it up to just below boiling point.
2. Grate the cheese and place in the saucepan a bit at a time. Let the cheese melt before adding more cheese – that way you avoid a lumpy fondue.
3. When all the cheese has melted, add tarragon and paprika.
4. Place the cheese in a warm bowl and serve with chorizo, pears, apples, tomatoes, fresh baguette or any of your favourite ingredients!
