A milky and buttery taste with notes of tropical fruit and green peppers which is derived from the natural, red smear on the rind and the albino blue mould inside. As Red Rind cheese matures, the taste and flavour of the red smear become slightly sharper, while the cheese itself gets more character. Castello Red Rind is a truly special cheese. Its taste and flavour are intense and piquant. Thanks to the unique production method, the mould culture develops from the inside of the cheese, whereas the red smear does so from the outside.     • Creatively crafted in Denmark from fresh cow's milk and cream
    • Strictly following the traditional methods with Castello craftmanship
    • Ripened according to traditional methods in small open vats
    • Cheese is pierced from the top and side to allow the albino mould to grow inside the cheese
    • Castello Red Rind is matured at a higher temperature than an of the other Castelo mould cheeses
    • Matured in a specific room only for Red Rind to avoid the contamination of albino mould in other cheeses
    • Each cheese is inspected for quality before going into a pack
