Born from trying to merge the best qualities of both brie and blue type cheeses. The high proportion of cream in the milk used for production results in a soft buttery texture and a milky taste.     • Creatively crafted in Denmark from fresh cow's milk and cream
    • Cheese curds are made according to traditional methods in large open vats
    • The cultures are added by hand
    • Each cheese is pierced in a unique star pattern to give a perfect distribution of blue mould
    • Each cheese batch is also cut by hand when the cheesemaker decides it has reached the right state of firmness to inspect if the cheese is ready for packaging
    • Each cheese is inspected for quality before going into a pack
