    • Each cheese batch is also cut by hand when the cheesemaker decides it has reached the right state of firmness to inspect if the cheese is ready for packaging
    • Each cheese is inspected for quality before going into a pack

    • Inspired by the mildness of traditional brie and creamy, rich flavours of blue cheeses, Castello Double Cream Brie Cheese was the very first new cheese recipe invented by our founding family of Tholstrup.
    • An addition of Pink Pepper flakes into the recipe took some time to master and our talented cheesemakers based in Denmark brought this particular Pink Pepper brie recipe to life in 2020!
    • Due to its non-standard recipe and a much creamier texture than regular brie, some Scandinavian countries like to consider our Double Cream Brie as its own cheese type under the soft cheeses family.
