Creamy Garlic & Herb Skillet Chicken with Mushrooms

ingredients

  • 1½ lb chicken breast or 3 thin boneless breasts
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • salt and pepper
  • 2 tbsp extra virgin olive oil
  • 2 tbsp butter
  • 8 oz shiitake mushrooms, sliced
  • 2 garlic cloves, minced
  • ¼ cup white wine
  • ¾ cup low sodium chicken broth
  • 1 container Castello® Garlic & Herbs Whipped Dip 5.3oz
  • 1 tsp fresh thyme
  • ¼ cup sliced sundried tomatoes

preparation

1. Season on both sides on chicken breasts with the salt, pepper, garlic powder, and onion powder.

2. Heat oil in a large skillet over medium heat. Add chicken to the pan and cook until both sides are golden brown, and chicken is cooked through. Set aside and cover with foil to keep warm.

3. Using the same pan, add butter and mushrooms. Cook over medium-high heat until golden brown, about 3-4 minutes. Turn heat to low, and add garlic. Cook until fragrant, about 1 minute.

4. Add the white wine and turn heat back up to reduce. Cook 5 minutes or until wine is reduced by half.

5. Add chicken broth, Garlic & Herb Whipped Dip, and thyme. Whisk into a smooth sauce and allow to simmer. Stir in sundried tomatoes.

6. Return chicken back into the pan and warm through. Enjoy!
