1. Preheat the oven to 200°C:
2. Place the mince, breadcrumbs, red chilli, 50g crumbled Castello® Tickler Extra Mature Cheddar, garlic and coriander into a large bowl, season and mix well until combined.
3. Next, roll into 4 equal-sized patties, approximately 150g each.
4. Over a high heat, on a griddle pan, fry the burgers for 2 minutes on each side, then place onto a baking sheet. Cook the burger in the oven for about 10 minutes.
5. Remove from the oven and add the remaining crumbled Castello® Tickler Extra Mature Cheddar. Bake for 2 more minutes until the cheese is melted and the burger is fully cooked.
6. Mix all the mayonnaise ingredients in a bowl, season and set aside.
7. Cut the bun in half and toast on a griddle pan, set aside. Next, place the peaches in a griddle pan over a high heat and cook for 2 minutes on each side until caramelised. Set aside.
8. Spread the mayonnaise on the top and bottom of the toasted bun. Top the bottom bun with the patty, peaches, and coriander, before finishing with the top bun.
