Cut the cucumber into small cubes, and mix in a bowl with lemon zest and juice, season to taste with salt and pepper. Place slices of lamb on crisp bread, then slices of the Castello Extra Creamy Danish Blue on top, divide the cucumber salad on top and decorate with fresh basil.
Place on a serving dish or wooden board.
Alternatively, encourage everyone to help themselves by serving the cucumber in a small serving bowl and placing on a wooden board next to the sliced lamb, crispbread and cheese.
Leftover mint sauce can also be used. Any herb can be used like parsley or chives.
