1. Spread butter evenly on one side of each slice of bread.
2. Turn the bread over on a cutting board so the butter is facing down.
3. Spread the mayonnaise evenly onto one slice of bread.
4. One the other slice of the bread, place two slices of new aged cheddar.
5. Drain and saute the kimchi in vegetable oil for 1 minute on medium high heat. Once chilled, spoon the kimchi onto the slice of breads and spread with mayonnaise.
6. Put the slice of bread together so all ingredients are in the middle.
7. Place the sandwich in a panini press and cook until the bread is toasted, and the cheese is warm.
