Coarse salad to-go with Mature Cheddar

A set menu of fresh vegetables and smooth cheese – our recipe for coarse salad to-go with cheddar is the perfect choice for picnics and potlucks of all kinds. Jars filled to size with onions, tomatoes, radishes and mature cheddar enjoy a pour of herbs and homemade vinaigrette to complete the picture.

ingredients

  • ¼ of small red cabbage
  • ½ a fennel bulb
  • 1 red onion
  • 2 tomatoes
  • 8 radishes
  • 125 g cheddar cheese, matured
  • mixed herbs (we’ve used red sorrel, basil, oregano and parsley)

Vinaigrette:

  • 6 tbsp olive oil
  • 3 tbsp apple apple cider vinegar
  • 1 tbsp honey
  • salt
  • pepper
  • 2 tbsp capers

preparation

Preparation

1. Cut the red cabbage, red onion and fennel into thin strips – use a mandolin if you have one – and distribute among the containers.

2. Top with both radishes and tomatoes. Close the containers.

3. Pick the herbs and pack them in a plastic container. Combine all the ingredients for the vinaigrette and pour into a jar.

4. Cut the Mature Cheddar into cubes and pack them.

5. When it’s time, just open all the containers and assemble the salad.

6. Add the Mature Cheddar and herbs last, then sprinkle with a little vinaigrette dressing.
