Preparation

1. In a medium bowl, beat together Blue Cheese, Mascarpone,dates, shallot, lemon rind and lemon juice.

2. Cover andrefrigerate 1 hour.

3. Moisten hands with water and shape into 1” balls, roll intochopped pecans, press lightly so nuts adhere and refrigerateuntil ready to serve.

4. Prior to serving, insert a pretzel stick intothe top of each ball.
